Its origins are found in the Mediterranean area, it was present in Ancient Egypt, known and appreciated by the Greeks for its therapeutic proprieties as well in Ancient Rome where it is mentioned by Plinio and Galeno. In ancient times it was considered magical by the Northern Europe populations. In 1600 it started to be used as food and replacement for coffee. In some areas of the Alps it is called the “Shepherd clock” because its folwers open up at the same time every morning and close about 4 p.m., when it is time to milk the cows
